2 Tbsp olive oil
1 Tbsp red wine vinegar
1 tsp minced shallot or white onion
2 cups of cherry or grape tomatoes, halved
1 (15oz) can white beans, drained and rinsed
1 cup feta cheese, crumbled
1/2 cup fresh chopped parsley
2 Tbsp Italian Flare Seasoning
Whisk the oil, vinegar, shallot or onion, pepper, and salt together in a bowl.
Add the tomatoes, beans, feta, parsley, Italian Flare Seasoning and toss to combine.
Taste and add more salt and pepper as needed.
